Calcium sulfate, commonly known as gypsum, is used in brewing beer for water treatment purposes. It is primarily added to adjust the calcium and sulfate levels in brewing water.

Calcium sulfate can enhance the perception of hop bitterness and flavor in beer, as well as promote the clarity and stability of the finished product. It can also help lower the pH of the mash, similar to calcium chloride, aiding in enzymatic activity during mashing and improving the extraction of fermentable sugars from the grains.
