Description
Torrefied Wheat is a pre-gelatinized whole wheat grain that has been heat-treated to enhance its functionality in the brewing process. Ideal for use in a wide range of beer styles, it promotes excellent head retention and body without adding significant color or flavor. The torrefication process causes the wheat’s starches to burst, making them more accessible to enzymatic breakdown during mashing.
This unmalted adjunct is particularly valued in English ales, Belgian wits, and hazy IPAs, where its high protein content helps contribute to a stable foam and a smooth mouthfeel. Torrefied Wheat also assists in creating a natural haze, making it a popular choice for brewers aiming for visual and textural richness.
Typical Use Rate: Up to 25% of the grist
Flavor Impact: Neutral to slightly grainy
Color Contribution: Very low (1.5–2.0 SRM)
Perfect for brewers seeking improved body, mouthfeel, and foam stability without altering the flavor profile.
